Perfumes and scents: Intense and highly aromatic, with notes of peach and lychee. The palate is sweet yet never cloying, thanks to its vibrant acidity, which provides freshness and balance.
Pairings: Ideal as an aperitif and pairs beautifully with fresh cheeses, desserts, and fresh fruit.
Winemaking: The grapes are destemmed and undergo a short skin maceration before gentle pressing. Fermentation takes place in temperature-controlled stainless steel pressurised tanks (autoclaves) at **12–15°C (54–59°F)**, where the wine undergoes its natural secondary fermentation to develop its delicate sparkle.
